Friendsgiving with Udi's Recipes

Thanksgiving isn't just for families!  In a survey conducted by Udi's, 2 in 3 Americans report that they include friends in their Thanksgiving celebrations.  We think that it's great that 2/3 of Americans feel the Thanksgiving spirit and transform their celebrations into "Friendsgiving".

Holiday food is always trendy, but sometimes you have guests that are on gluten-free diets and you have to find new recipes and snacks. You may wonder, "What do I make for guests that are on gluten-free diets?"  Let me share some fantastic gluten-free foods that are delicious right out of the bag/container/box and then a couple gluten-free recipes that are perfect for Friendsgiving.

Let's start with a couple of snacks that are the cream-of-the-crop when it comes to gluten-free snacks.  These are our family favorites and don't require any prep work!

First, we love the Udi's Dark Chocolate Brownie Bites. These decadent desserts are soft and chewy. They are rich and delicious - you'll even notice tiny little chocolate chunks in them.  As part of our "Friendsgiving", I included these on my list of things that I am  grateful for because my son and I enjoy snacking on these throughout the year when we have our "movie nights"!
The next snack that we love right out of the box is the Maple Pecan Chocolate Chip Cookies.  It's hard to find good gluten-free cookies, but Udi's totally rocks with their cookie recipes. I don't know what their magic is, but their cookies are really good.  These Maple Pecan Chocolate Chip Cookies are perfect right out of the box.  Here is Dallas, anything with pecans is popular since pecans are a popular crop around here. These cookies disappear quickly at our house!
Another trendy snack is the Aged Cheddar Ancient Grain Crisps. These gluten-free snacks are fantastic because they are so flavorful. They contain a lot of healthy ingredients that we love, including Amaranth, Quinoa, Flax, Sesame, Millet, and Black Seeds.  They come in a couple of other flavors too, but Aged Cheddar is my personal favorite!
The Harvest Crunch Muffins are perfect for breakfast. These muffins are not only gluten-free, but they contain a unique combination of ingredients that are amazing together: cranberries, sweet potato, quinoa flour, and pepitas. These are the ultimate Friendsgiving breakfast or snack!
Now let me share three gluten-free recipes that are favorites at our house. The first is Gluten-free Skillet Stuffing.  This only uses 5 ingredients and is easy to prepare. We love how flavorful this recipe is!


The second is Gluten-free Pumpkin Bread Pudding.  This is a festive recipe that we receive many complements on and everyone wants seconds.

The third is Friendsgiving Yogurt Parfait.

Recipe: Gluten-free Friendsgiving Yogurt Parfait
Ingredients:
  • 1/2 cup Udi's Cranberry Granola
  • 1 cup plain fat-free yogurt
  • 1 cookie of your choice for decoration 
Directions:
1. Fill a glass with 1/4 cup of Udi's Cranberry Granola. 
2. Add the 1 cup of plain fat-free yogurt. 
3. Add the remaining 1/4 cup of Udi's Cranberry Granola. 
4. Add a festive cookie for decoration.
