Many Cinco de Mayo recipes use shredded chicken. If you are preparing enchiladas, burritos, taco salads, or any other meal that uses shredded chicken, let me share this trick.
1. Boil chicken breasts for approximately 18 minutes or until thoroughly cooked. Add to mixer bowl.
2. Attach the Paddle Attachment to your mixer. Here is a photo of mine.
3. Place chicken in the mixer bowl and then run on low speed until shredded.4. Optionally add any seasoning and mix on low speed. In the example below, I added taco seasoning, shredded cheese, cream cheese, and corn for a creamy enchilada dish that I was preparing.
