Red Lentil Penne with Green Beans and Tomatoes

Ingredients:
  • 1 package Explore Cuisine Red Lentil Penne, cooked
  • 1/3 lb. green beans
  • 1/3 pint grape tomatoes, halved
  • 2 T. olive oil
  • 3 garlic cloves, shaved
  • 1 T. parsley, chopped
  • salt and pepper to taste
  • red chile flakes to taste



Directions:
  1. Cook green beans in boiling salted water for 5 minutes. Shock in an ice bath to stop the cooking and set the color. Drain then slice into thirds.
  2. Heat oil in a sauté pan over medium-high heat.
  3. Add garlic and cook 1 minute.
  4. Add beans and tomatoes to warm through.
  5. Toss bean mixture with penne, parsley, salt and pepper, and red chile flakes.
