Ingredients
- 4 large chicken breasts
- 1/2 cup of Ranch Dressing
- 1 cup of bread crumbs
- 1/2 cup of cooked quinoa
- 1/2 cup of cooked brown rice
- 2 Tablespoons of Ranch Dressing
1. Preheat oven to 350-degrees.
2. Mix the cooked quinoa, cooked brown rice, and 2 Tablespoons of Ranch Dressing until the dressing is thoroughly distributed. Set aside.
3. Trim the fat from each chicken breast and slice lengthwise to create a pocket to stuff the quinoa and brown rice mixture. Stuff 1/4 cup of the quinoa and brown rice mixture into each chicken breast.
4. Add the 1/2 cup of Ranch Dressing to a shallow dish and dip each chicken breast into the Ranch Dressing to coat thoroughly.
5. Add the 1 cup of bread crumbs to a shallow dish. Coat each chicken breast in bread crumbs and then place on a greased cookie sheet.
8. Bake for approximately 30 minutes or until thoroughly cooked.
9. Allow to cool and serve with fresh broccoli, carrots, and extra Ranch Dressing for a well-balanced and flavorful meal.
