Ingredients
- 1 head cauliflower
- 1 Snack Size Package of Joolies Organic Medjool Dates (3 dates)
- 1/4 cup pine nuts
- 2 tbs olive oil
- 1 tbs zatar seasoning
- 1 tbs thyme
1. Separate cauliflower into florets. Toss in 1.5 tbs olive oil, zatar, salt, and pepper. Arrange on baking sheet. Roast for 20-25 minutes at 400F until tender. Flip midway through roasting.
2. Roast pine nuts under medium high heat in a skillet 4-5 minutes, or until golden brown. Add 0.5 tbs olive oil, dates, and thyme. Cook another 2-3 minutes.
3. Top roasted cauliflower with pine nuts and dates, and serve.
