Recipe: Green Pancake Wreath
Ingredients:
- 1 cup of pancake mix
- 1 egg
- 1 cup of blueberries
- 1 cup of packed spinach
- 1/4 cup of milk
Directions:
- Puree the blueberries and spinach.
- Whisk the egg
- Mix all of the ingredients together, including the pancake mix, whisked egg, puree, and milk until well blended.
- Preheat a frying pan to medium heat.
- Drop by small amounts onto the frying pan and cook until each side is golden brown. We used approximately 1/4 cup for each of our pancakes, but it's easy to adjust to your preference.
