Vegan Recipe: Chickpea Avocado Toast with Diced Celery and Radish
Ingredients
- 1 whole grain hamburger bun
- 1/2 avocado
- 1/2 can of chickpeas (drained)
- 1/4 cup of diced celery (fresh)
- 1 diced radish (fresh)
- Options: dash of paprika
Directions
1. Preheat the oven to 450 degrees.
2. Toast the bun for approximately 8 minutes of until slightly browned.
3. In a small bowl, mash the avocado and chickpeas together.
4. Stir in the diced celery and diced radish.
5. Spread the mixture on the buns.
6. Optionally sprinkle with paprika.
7. Enjoy!
