The Gluten-Free Meal Prep Cookbook by Pam Wattenbarger is my new favorite cookbook. If you follow regularly, you know that she is one of my favorite authors! Her latest book is generously packed with 12 weekly plans and recipes for ready-to-go meals. People with food allergies will especially appreciate this book because it not only helps you to save time, but also makes it easy to incorporate more variety into your diet with the excellent shopping lists and guidance on how to meal prep!
The author of this book is a down-to-earth mom who relates to families that have food allergies. In fact, her own family members have food allergies and this inspired her book. She also understands that parents are busy and that we are all looking for ways to be more efficient without sacrificing our health. That's where she comes in with this book that includes 12 weekly plans and recipe for ready-to-go meals! She slices and dices things from different angles too -- guidance on prepping, food safety (including a handy table for how long different foods stay good in the freezer and more), shopping lists and recipes for different seasons, and delicious recipes that my family members love!
Something that I don't share often is that my family members have different dietary restrictions. One family member had an anaphylactic response to dairy. Another has an intolerance to multiple foods. My husband doesn't eat meat. As you can imagine, it's not easy to simply make a pizza. One person wants regular cheese and pepperoni; another needs dairy-free cheese; and two of us don't want pepperoni. That's actually one of our easier meals, but you will notice that it requires some customization and a little extra time. Now imagine that I want to prepare something other than a simple pizza. It's a lot of work. The author of this cookbook understands my life! The recipes are labeled for different food restrictions at the top of each page. It's easy to browse for dairy-free and vegetarian recipes.
I asked for permission to share a couple of my favorite recipes so that you could see examples of why I love this book. These first is Chilly Cucumber Soup. This is a unique recipe that is easy to make.
Another one of my favorites is the Peach and Pineapple Smoothie. Similar to the many other recipes, this is a great one to make and is easy to freeze.
