Recipe: Easy Red Lentil Pasta with Kale and Mushrooms
My New Year's resolution is to pack more fiber into my diet, so I'll feature recipes throughout the year that are packed with fiber. It today's post, I'll share an easy recipe that uses Barilla Legume pasta. Did you know the Barilla Legume pasta is:

Recipe: Easy Red Lentil Pasta with Kale and Mushrooms
Ingredients:
- One 8.8 ounce box of your favorite Barilla Legume Pasta (We used the Chickpea Rotini!)
- 12 ounces of your favorite red pasta sauce
- 1 8 ounce container of sliced mushrooms
- 1 8 ounce bag of kale
- 1 teaspoon of olive oil
Directions
1. Prepare the Barilla Legume Pasta according to the instructions on the box.
2. While heat a frying pan over medium heat and add the olive oil, sliced mushrooms, and kale. Stir fry approximately 6 minutes or until desired crispness.
3. Once the pasta is ready, drain it, and then toss with the pasta sauce.
4. Serve the pasta, mushroom, and kales separately or mixed together based on your preference!
