Recipe: Banana Oatmeal Pancakes that are Gluten-Free with Optional Chocolate Chips
Ingredients:
  • 1 cup of milk
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 1 large banana (preferably ripe)
  • 2 cups of rolled oats
  • 1/8 teaspoon of salt
  • 3/4 teaspoon of cinnamon
  • 1/2 teaspoon coconut oil
  • Optional: 2 tablespoons of chocolate chips
Directions:
1. Add all of the ingredients with the exception of the coconut oil and the chocolate chips to a blender and blend until smooth. I use a Nutri Ninja blender on the UltraBlend setting and it's done in in approximately 60 seconds.

2. Optionally stir the chocolate chips into the batter if you want to include them.  We prefer mini chocolate chips, but it's based on your preference.

3. Heat the coconut oil in a nonstick pan over medium-low heat.

4. Add 1/4 cups of batter to the skill and cook for 2 to 3 minutes until bubbles form on the pancake and then flip and cook for approximately 1 to 1 1/2 more minutes.
