What to Substitute for Eggs: Easy Egg Substitutes to Make Recipes Healthier!


 In today's post, I will share some substitutions for eggs!  Given the current egg shortage, I'm sure that many of you would like to find substitutes for eggs. However, did you know that I've been using egg substitutes for almost 3 years now? After having colon cancer removed, I tried to switch to a vegan diet for health reasons.  I'm not 100% vegan, but I've made a lot of progress as I've found recipes and gained experience. Substituting eggs is one tip that I learned along the way. I'm happy to share the ideas with you!

Egg Substitutes - Each of the following are approximately 1 egg

  • 1/4 cup of applesauce 
  • 1 Tablespoon of chia seeds + 3 Tablespoons of water  
  • 1/4 cup of mashed avocado  
  • 1/4 cup of plain yogurt  (note that this is not a vegan option)
  • 1/4 mashed banana (note that this tends to have a banana taste, so be extra careful depending on the recipe)
The egg substitutions above have been great in various recipes that I've made over the past few years. I am just not a fan of the mashed banana substitute because the flavor has been a bit strong in some recipes. In any case, please check back soon because I'll post some recipes and examples using egg substitutes soon!

While the egg shortage is inconvenient for many people, try to look at the bright side that it is an opportunity to experiment with substitutes that may make some of your recipes healthier!
