Recipe: Copycat Starbucks Lemon Bread Using Yellow Cake Mix and Lemon Pudding!
This recipe is incredible! It's not exactly like Starbuck's Lemon Bread in terms of this recipe is not quite as dense and heavy, but it's pretty close and tastes delicious! Even better, we are sharing a recipe that only takes about 15 minutes of prep work before you pop it into the oven. We love how moist and delicious this turned out!
Ingredients
Lemon Bread
- 1 box of yellow cake mix
- 1 small box of lemon instant pudding
- 4 eggs
- 1/3 cup vegetable oil
- 1/2 cup lemon juice
- 2 Tablespoons lemon zest
Frosting
I make two different frostings, but don't worry, I use the same mixing bowl for each!
- Tangy Lemon frosting
- 1 cup confectioner's sugar
- 2 teaspoons lemon juice (add more or add more water until consistency is right)
- Vanilla frosting
- 3/4 cup confectioner's sugar
- 3/4 teaspoon vanilla
- 1 teaspoon butter
- 1/2 teaspoon water (add more water until consistency is right)
Directions
1. Preheat oven to 350 degrees.
2. Beat the eggs.
3. Add the vegetable oil and lemon juice and beat until well blended.
4. Add the yellow cake mix, lemon instant pudding, and lemon zest. Beat until well blended.
5. Grease the bread pan and then add the batter.
6. Bake for 50 minutes or until a toothpick comes out clean.
7. Allow to cool.
8. Make the Tangy Lemon Frosting first in a mix by whisking the ingredients together in an electric mixer.
9. Top the lemon bread with the frosting. Note that I leave the lemon bread in the pan until the frosting dries.
10. Make the Vanilla Frosting by whisking the ingredients together in an electric mixer.
11. Pour the second round of frosting onto the lemon bread. Again, note that I leave the lemon bread in the pan until the frosting dries.
