Recipe: Pumpkin Chocolate Chip Crater Cookies
Ingredients
1. Preheat oven to 350° F.
Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups quick or old-fashioned oats
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1 cup butter, softened
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 cup pureed pumpkin (fresh or canned)
- 1 large egg
- 1 1/4 teaspoon vanilla extract
- 1 cup chocolate chips
1. Preheat oven to 350° F.
2. Combine the flour, oats, baking soda, cinnamon and salt in medium bowl and set aside.
3. Beat the egg, vanilla, and pumpkin and set aside.
4. Beat the butter, sugar, and brown sugar and set aside.
5. Combine the two wet mixtures from steps #2 and #3 and beat until thoroughly mixed.
6. Slowly add the flour mixture and mix well.
7. Stir in the chocolate chips.
8. Drop by rounded tablespoons on greased baking sheets.
9. Bake for 14 to 16 minutes or until cookies are lightly brown around the edges and cooked in the centers.
10. Allow to cool on the baking sheets for 2 minutes and the move to wire racks to cool completely.
